Sweet & Sour Spinach Salad
Ingredients
| 4 | egg yolks
| | | 1 | teaspoon | dry mustard
| | 1 | teaspoon | salt
| | 1/4 | teaspoon | freshly ground white pepper
| | 1/2 | cup | olive oil
| | 1/4 | cup | sugar
| | 3 | Tablespoons | red wine vinegar
| | | Juice of 1/2 lemon (about)
| | |
| | | | 1 | Large | bunch spinach
| | 12 | | white mushrooms, thninly sliced
| | 1/4 | cup | cooked bacon

Beat yolks in small bowl until light and lemon colored. Add mustard, salt and pepper and blend well. Whisking constantly, add olive oil drop by drop, then add in slow steady stream, until thickened. Stir in sugar, vinegar and lemon juice and mix well.
Remove stems from spinach and discard. Tear spinach into bite size pieces. Place spinach in large salad bowl. Add mushrooms, bacon and dressing. Toss well.
