Pacific NW Salmon Twist
This is our families favorite dish from Connie's nephew in Anacortes, Washington.
Ingredients
| 1 | large | salmon, filleted(prefer sockeye)
| | 1 | large | white onion, sliced thin
| | SAUCE:
| | | | 1/2 | cup | butter
| | 1/2 | cup | light mayonnaise
| | 1/4 | cup | light soy sauce
| | 1/2 | teaspoon | fresh ground pepper
| | 6-8 | cloves | garlic
| |

Heat oven or grill to around 400 degrees. Melt butter in saucepan until just warmed through. Lay salmon fillets on cookie sheets with skin down. Take a knife and slice the flesh of the fish across to allow the sauce to penetrate better. Spread thin layer of sauce over fillets. Arrange sliced onions across top and cover again with more sauce. You should still have some sauce left in the pan. Bake until salmon flakes around 20 - 30 minutes. You may want to baste the salmon around 10 minutes in the cooking time.
