Lemon Pecan Chicken
Ingredients
| 1 | cup | fresh parsley
| | 1/2 | cup | grated parmesan cheese
| | 1/2 | cup | pecans
| |
| | | | 2 | cloves | garlic
| | 1 | Tablespoon | dried basil
| | 3 | Tablespoons | lemon(1 1/2 fresh, squeezed)

| | | | 1/3 | cup | olive oil
| |
| | | | 6 | chicken breasts skinned
| |
Combine first three ingredients and reserve 2/3 cup to garnish at the end, prior to serving. Take remaining mix and add to the following 3 ingredients in a blender and blend until smooth. Scrape down and add the olive oil very slowly. Place 6 chicken breasts (skinned) on ungreased 11x7x1 1/2 baking dish. Sprinkle with salt. Pour blender mix over chicken. Bake 350 degrees for 30 mins. Sprinke with reserved dry mix and serve.
