Smoked Beef Log
Handy to have smokey beef log which keeps in refrigerator for approximately 3 weeks.
Ingredients
| 5 | pounds | hamburger (not lean)
| | 2 1/2 | teasp. | whole mustard seed
| | 2 1/2 | teasp. | coarse pepper
| | 2 1/2 | teasp. | liquid smoke
| | 5 | teasp. | Mortons Tender quick salt
| | 2 1/2 | teasp. | garlic salt |
Mix all ingredients in bowl, cover and refrigerate. Remove once a day for 3 days and knead well for 5 minutes. On the 4th day, divide meat into 6 or 7 rolls. The rolls should be about the size in diameter of silver dollar. Lay in broiler pan which has not been greased. Bake 9 hours in 160 degree oven. At 4 1/2 hours, turn over and continue baking. At 9th hour, remove and wrap in paper towels to remove grease. Roll in handy wrap and refrigerate or freeze. Will keep well in refrigerator for 3 weeks.
This beef log can be sliced and used for all types of great snacking.
