Italian Cream Cake
If you want to impress someone without purchasing the "You Know What" ready mix, just throw this together and it is quite awe inspiring!!.. Little extra effort but quite worth it!!
Ingredients
| 1 | stick | margarine
| | 1/2 | cup | shortning
| | 2 | cups | sugar
| | 5 | | egg yolks
| | 2 | cups | flour
| | 1 | teasp. | soda
| | 1 | cup | buttermilk
| | 1 | small can | flaked coconut
| | 1 | cup | chopped pecans
| | 1 | teasp. | vanilla
| | 5 | stiffly beaten | egg whites |
Cream margarine and shortning. Add sugar and cream well. Add egg yolks, beating well after each addition. Sift together flour and soda and add to creamed mixture, alternating with buttermilk. Stir in vanilla, coconut, and nuts. Fold in egg whites. Put in lightly greased 13x9 inch cake pan and bake 350 degrees for 25 minutes.
Frosting for this magnificent cake is as follows: 8 ounces cram cheese, 1/2 stick margaring, 1 teaspoon vanilla and 1 box powdered sugar. Mix all together and frost this unique dessert.....
