Salmon Ala Connie
Barbequed Salmon Many ways to prepare this lucscious fish but this is "my way"
 

Ingredients
1Fresh salmon filet
1dashlemon pepper
1/2cupsoy sauce
1wholelemon, sliced
1wholeoranges, sliced
1/2cupbrown sugar
1/4cupbutter


About 2 hours prior to barbequeing, make a foil boat for the salmon filet with an edge to the "boat" about 1 inch high all around the salmon filet. Place the filet in the boat, skin side down, drizzle enough soy sauce over the top to completely cover the top of the fish. Sprinkle with lemon pepper, slice lemons and oranges very thin and place them quite close together, alternating the oranges and lemons so that the entire fish is covered with the citrus.

Just before cooking, Melt together 1/2 cup brown sugar and 1/4 cup butter. Baste with this mixture over entire top.

Place on the grill lid down and cook with lid closed. Baste several times with the brown sugar mixture. Cook until fish flakes easily with a fork (approx. 15 minutes).
 
Do not overcook or the salmon will be very dry!
