Veal Parmigiana
Ingredients
| 1 | pound | thin veal steak
| | | | salt and pepper
| | 1 | | egg
| | 1/3 | cup | grated parmesan cheese
| | 1/3 | cup | fine dry breadcrumbs
| | 1/4 | cup | oil
| | 2 | Table. | butter
| | 1 | minced | onion
| | 1 | can | tomato paste
| | 2 | cups | hot water
| | 1 | teas. | salt
| | 1/2 | teas. | dried marjoram
| | 1/2 | pound | mozzarella cheese

Cut veal into 6 - 8 pieces Sprinkle with salt and pepper. Beat egg with two teas. water. Dip veal in egg, and roll in mixed cheese and crumbs. Heat oil. Fry veal until golden brown. Lay in shallow baking dish. In same skillet cook onion in butter until soft. Add tomato paste mixed with water, salt and marjoram. Boil a few minutes. Pour most of sauce over meat. Top with cheese then rest of sauce. Bake 350 degrees for 30 minutes.
