Veal Parmigiana

 

Ingredients
1poundthin veal steak
salt and pepper
1egg
1/3cupgrated parmesan cheese
1/3cupfine dry breadcrumbs
1/4cup oil
2Table.butter
1mincedonion
1cantomato paste
2cupshot water
1teas.salt
1/2teas.dried marjoram
1/2poundmozzarella cheese


Cut veal into 6 - 8 pieces Sprinkle with salt and pepper. Beat egg with two teas. water. Dip veal in egg, and roll in mixed cheese and crumbs. Heat oil. Fry veal until golden brown. Lay in shallow baking dish. In same skillet cook onion in butter until soft. Add tomato paste mixed with water, salt and marjoram. Boil a few minutes. Pour most of sauce over meat. Top with cheese then rest of sauce. Bake 350 degrees for 30 minutes.
